Healthy Chicken Soup Recipe

Healthy Chicken Soup

  • 1 1/2 lb chicken drumsticks or wings (preferably organic)⁠
  • 1 onion, cut in half⁠
  • 1 celery root, peeled ⁠
  • 2 parsnips⁠
  • 3 potatoes⁠
  • 4 carrots⁠
  • 3 zucchini⁠
  • 1 bunch of dill⁠
  • 1 bunch of parsley⁠
  • Salt and pepper to taste⁠
  • Organic chicken base bouillon ⁠

    Place chicken in bottom of large stock pot. Add onion, celery root, parsnips, potatoes, carrots, and zucchini to the pot. Add water to the pot until vegetables are covered (keep track of how many cups of water you add!). Heat on high until water is at least warm and then add chicken bouillon based on the bouillon's instructions. Add the bunch of dill and parsley on top of the water. Bring to a gently boil and cook for 45 minutes. Remove the bunches of dill and parsley. Scoop out the chicken, separate from the bone using a fork, and put chicken back into the soup. Salt and pepper to taste!⁠
